Famous Key Lime Pie

Crank up the “Kokomo” and bring a bit of the Keys home with this simple Key lime pie recipe.

 

Ingredients:

  • One 9” graham cracker pie crust

  • One 14 oz. can sweetened condensed milk

  • 4 egg yolks (Egg whites can be saved to make optional meringue topping).

  • 3 oz. Key lime juice

How To:

  • Pre-heat oven to 350 degrees Fahrenheit.

  • Blend sweetened condensed milk and egg yolks at slow speed until smooth.

  • Add Key lime juice and blend again until smooth.

  • Pour mixture into pie crust.

  • Bake for 20 min.

  • In the meanwhile, prepare optional meringue topping.

  • Cool pie 20 min. before refrigerating.

  • Serve chilled Key lime pie with whipped cream topping or meringue.

Meringue:

  • 4 egg whites

  • 5 Tbsp. sugar

  • Pinch cream of tartar

  • 1 tsp. vanilla

Beat egg whites, sugar and vanilla at high speed until blended. Add cream of tartar. Continue beating until egg whites form stiff peaks. Spoon meringue on top of pie and bake for another 10 min.
